Northern Maine up above were I live is all potatoes and their soil is glacial deposits of volcanic minerals. The soil is amazing. They mostly have a very simple amendment every fall and spring.

I have been growing potatoes for many years now and Based on my observations, You hit the nail on the head about size. They need lots of water from just before the time of blossoming and continuing for the next month. THis will produce the biggest taters . They finish up really small if the soil gets to dry while they are developing. THe other key is to keep the plants in good health and growing for as long as possible. Keep insects and disease under control. We have whiteflies and flea beatles here which the plants will grow OK with, but ultimately will leave a smaller less productive yield. Controlling potato beetles goes without saying as they will destroy your crop in a hurry.

I forgot there's a potato belt out to the northeast, and into Canada too I think. There are areas in western Washington that grow the little potatoes for boiling but as far as I know the big russets would all be coming from the magic soil of eastern washington, idaho, or eastern oregon. Thanks for the comments guys.
