Mr.McClew,,Docs right,,boil for an hour and tenderize,,then put on grill and BBQ..Do's it all da times here..MMMM<MMMMMM Good...Nothing like BBQ Coon!!

cook them in the oven on a big 2 x 12 sawmill rough cut board on 500 degrees for 5 hours, throw away the coon and eat the board!!

Pick barbeque like you would a wild pig. It cooks slowly and tenderizes the meat. You can even put barbeque sauce on one or two of them.

Coons can be alittle greasy but still taste good. Just like groundhogs the younger they are the more tender they are.BBQ is the way to go and in the oven. If you have a young on the grill works nice.
Groundhogs are better to eat as they do alot more damage to your pumpkins and that makes them taste all the better!!!! :)

5.....why not. The depression of 29 made all kinds of possible meat attractive to my folks. Likely better eating than what ends up in your average hot dog. Tastes like pork to me.

6..... I wouldn't know what all I have eatten. When I grew up we had mystery meat. Sometimes it might be snapping turtle, frogs, crawdads, squirrel, rabbit, javalina, elk, deer, or whatever. I know my dad killed Raccoon's in the backyard and I never saw them in the garbage can, so, I assume I saw them on the dinner table. Waste not, want not.
I still say pit barbeque, makes the meat tender, juicy, and you can put barbeque sauce on some of it. YUMMY!

7 if Varmint Stew counts. Simmer for hours with Opossum & Sqirrel then add fresh veggies. I was enjoying the plate too until the guys wife told me what it was. I should have known when I noticed the trailers carpet pad was actually corrugated cardboard that something was up. We live we learn. I think today I'd prefer cloud's sawmill lumber.

Anyhow, I think this is about how she does it.

"Clive Younghusband's Venison &/or Varmint Stew"

Ingredients:
4 lb Venison (haunch, ham) &/or other varmints
3 c Cheap red wine
1 1/2 c Red or white wine vinegar
pn Ground allspice
2 Whole bay leaves
4 c Celery, carrots, leeks, Roughly chopped
Sugar
Salt
8 oz Jar of beef gravy
3/4 c Pearl onions, trimmed
3/4 c Fresh mushrooms
2 Cloves, garlic, crushed
2 pn Ground oregano
1 lb Salt pork, diced

--------------------------------------------------------------------------------
Instructions:
1>. Pour half bottle of red wine and half the wine vinegar into a non-aluminum pan.
Add bay leaves, allspice and vegetables.
Do not season.
Bring to a boil for 30 minutes.
Cool to room temperature.
This can be done overnight in the refrigerator but allow to return to room temperature before adding meat.
Strain mixture through cheescloth.
Discard the vegetables and spices in the cheesecloth.

2>. Add 2 tablespoons sugar and 2 tablespoons salt to the liquid.
Cut venison &/or varmint into 2" cubes.
Add to the strained mixture.
Let mixture stand in the refrigerator for 24 hours.

3>. Saute mushrooms and onions until limp.
Add gravy, garlic, oregano and the remaining red wine.

4>. Fry salt pork until crisp.
Drain.
Add salt pork to Mushroom/gravy mixture.

5>. Remove venison from marinade.
Throw away marinade.

6>. Saute venison until brown.
Add to mushroom/gravy mixture.
Place mixture in oven-proof casserole and cover.
Bake at 350 deg.
F for 2 hours or until venison checks done.

7>. Serve stew over wild rice with cranberry sauce on the side.

8>. Wash down with ample brewed or distilled spirits of choice. Beer is recommended.

Euwwwwww you guys will eat anything! Round here the most unusual thing eaten is rabbit. Are you guys not afraid of Rabies?
Way to go Mr. MeClew. Catch and release. I do that with mice that come in (if I get them before the cats kill them.) Everyone told me that they would come back in...(after my Tonkinese cats had played with them vigorously.) I ask them "would you come back in"? I think not. We never saw those particular mice again...and yes you CAN tell them apart.

Any month that has an "R" in it's ok to eat rabbits etc. That's what my dad taught me...thus May through August is bad.

Coons are smart. They are certainly not going to come near "you" again. LOL. Hubby caught our two barn cats (actually half grown kittens) eating a young rabbit this morning. Apparently they were never told that this is the wrong month to be eating rabbit. Hee hee.
Mr. McClew.... Did you ever try a coon fence? We use one every year to keep the varmints out of our corn. Take an wire fence and string it 4 to 6 inches above the ground. Place another strand a few inches above that and hook up to a livestock fencer. (Make sure your fence is grounded) Works great! The first year we put a fence like that up, the little buggars touched it. We heard all kinds of coon type swear words from our bedroom window. We have never had a problem with coons since.

8-coon has been on my table for many years i enjoy them roasted just like a yankee pot roast either in gravy or a red sauce with potatoes carrots and onions,red sauce is broth tomato paste a little sugar liquid smoke yummmmmmmmmmmn anyone want to go coon hunting!
