Ok folks I think I will share the BEST salsa recipe you will ever find.
Here is what you need.
15 Tomatoes, it's best to mix them ( red,pink,& a few yellow)
5 medium size onions
5 large bell peppers ( yellow, green, red or orange)
1 whole head of garlic
1 cup fresh cut cilantro
5 Hungarian wax peppers
5 Sweet banana peppers
8 jalapenos
2 habaneras
3 chili peppers
******** The above will make a nice "warm" salsa but I add the following to really heat things up*********
1 Cherry Bomb hot pepper
1 Bulgarian carrot hot pepper--- XXX Hot
1 Yellow mushroom hot pepper--XXX Hot
2 more habaneras
1 Mexi Bell hot pepper
2 giant red chili's
****** To get the Cherry bomb, Bulgarian carrot & Yellow mushroom you will probably have to grow them BUT it is worth it.
Ok on to preparation****
Dice up the tomatoes, onions, bell peppers,Hungarian wax & banana peppers. Put 2/3 of the mixture in cooking pot & set remaining third in a bowl & set aside.
Dice up everything else & put in cooking pot & cook it down until it is just shy of a soup mixture. At which time you will add the 1/3 you set aside & cook 5 minutes longer then remove from heat & proceed to can it ( you will never eat this much right away)
When I take these jars of salsa to work, or my wife does people will fight for it.I promise it will be the best salsa you have ever eaten

Paul,

Thanks for this great recipe. Yesterday I harvested a bunch of tomatoes, chilis and jalapenos. Wasn't sure what I was going to do with em at first, till I read this post. I posted a picture in the photo gallery of the end reuslts. We did modify your recipe a bit, and I think I spelled your name wrong in the gallery post, sorry.

thanks again,
owen

How did it turn out for you Owen ?
The wide variety of peppers is what makes it great, I only grow 1 plant each of the Cherry Bomb,Bulgarian carrot,Yellow mushroom & Mexi Bell. Each plant will produce about 30 peppers & I only use 1 each per batch. I also use 1 each per quart jar when I make my hot cauliflower ( also a great taste).
Glad you enjoyed it..............Paul

It was great Paul! And plenty hot enough without the extras! We only made about 10 jars, but that will be enough for the 2 of us this winter. Thanks again....owen
